This three ingredient potato soup recipe will change your life. It’s easy, cheap, and delicious! What more could you ask for?!
Before we get into it I have two quick disclaimers:
- I am not a food blogger. I don’t really know what I’m doing. I’m just an average girl who kinda hates cooking but hates paying for fast food and meal kits more. So, here we are.

The Only 3 Ingredients You Need:
- 3-4 Large Potatoes
- Chicken Stock
- Heavy Whipping Cream
Bonus (optional) Ingredients:
- Salt and pepper
- Cheese
- Bacon
Instructions for the Easiest Potato Soup:
- Wash, peel, and cube your potatoes
- Place in a pot and cover with chicken stock (*note: having more than enough chicken stock is better than not enough, but use your best judgement)
- Boil the potatoes in the chicken stock until the potatoes are fork tender
- Bring your heat to low, and use a potato masher or a fork to mash the cubes down
- Add 1-2 cups of heavy whipping cream (*this will depend on your desired thickness, and how much stock is left)
- Salt and pepper to taste
- Bring your heat back to medium and stir
- Simmer on medium/low until you reach desired consistency
- BONUS: Top your soup with bacon and cheese
It’s simple. Easy. Cheap. And GOOD. What more could you ask for?!
